Sweet and Spicy Salmon

This recipe is enough for two salmon fillets but can be easily doubled or tripled.
Ingredients:
2 salmon fillets
2 cloves garlic, minced
1 T apricot jam
2 T brown sugar
1 T honey
1 T hoisin sauce
Juice of one lemon
1/4 t cayenne pepper
1/3 cup apple juice (My favorite is Simply Apple)
Preheat oven to 425°
Mix all ingredients except salmon in a large bowl.
Pour 1/3 of the marinade in a small sauce pan and reduce over medium heat while salmon cooks.
Add salmon fillets to remaining marinade and let sit for 15-20 minutes.
Place salmon on a baking sheet lined with foil and put into the preheated oven. Discard used marinade.
Bake for 12-15 minutes or until fish flakes easily with a fork.
Pour reduced sauce over salmon and enjoy.
